The recipe calls for:
•1/2 tsp Olive Oil
•1/2 medium red onion, cut into thin wedges
•2 medium garlic cloves, finely chopped
•1/4 tsp ground cumin
•1 cup canned black beans, rinsed and drained
•2 Tbsp cilantro, chopped
•2 tsp red wine vinegar
•2 medium oranges or grapefruits, peeled, segmented
•salt & pepper to taste
Saute the onion in olive oil, adding the cumin and chopped garlic after the onion is translucent. When the garlic begins to brown, add the black beans and cook just long enough for them to warm up. Remove the mixture from the heat and add the remaining ingredients: the orange, cilantro, balsamic vinegar and salt and pepper.
I put half of the mixture on my favorite mix of spring greens with half an avocado.
The verdict: yum! I do wish I had read the recipe more carefully and used two oranges instead of the one. It was still fab, but double the citrus would have doubled the fun!

I do love my legumes. And black beans are my absolute faves. Did you like the sweetness? I probably would have to add a little heat to counteract.
i love beans too, except green beans, gag :) lentils are my total fave, i should make them more. but back to the black bean salad: with all the onion and garlic there was not a pronounced sweet flavor, the citrus actually brought out the other flavors even though it was definitely present. and the cilantro rounded out the palate-presentation. i'm a fan of spicy foods but i felt no need to add any punch, except wishing i had used two oranges per the actual recipe. but if you change it up let me know how it turns out!

I made the same mistake! I used a WHOLE can of beans (double the amount) and only one fruit (considering the double beans, this is 1/4 the amount). I will be more careful next time too. Either way, this is a great salad and I loved having the mixture in the fridge for a quick 1 point snack! Glad you enjoyed it too.
